Baked Chicken Lasagna
Ingredients
18 lasagna noodles
2 cups cottage cheese, creamed
4 cups cooked chicken meat, diced
2 cups Cheddar cheese, shredded
1 cup Parmesan cheese, grated
1/2 cup onions, finely minced
1/2 cup green bell pepper, minced
1/2 cup red bell pepper, minced
1 1/2 cups sliced button mushrooms
4 tablespoons oil or butter
1 can cream of chicken soup
1/3 cup milk
Directions:
You need to preheat oven to 350 degrees F. Boil water with salt in a large. Add the lasagna noodles and cook 10 minutes until al dente, and then drain the excess water. In a medium size saucepan, melt the butter and saute the onions along with the green peppers, red peppers and mushrooms. Then add the chicken soup and milk and then cook until smooth. In a 9×13 inch baking pan, layer the lasagna noodles, the cooked chicken and the soup mixture with the cheeses. Repeat the procedure until gone. Bake it covered in the preheated oven for 50 minutes.
Easy Chicken Pasta
Ingredients
350g pasta bows
2 cups broccoli, cut into florets
1 tbsp oil
3 large boneless and skinless chicken breasts, cut into chunks
2 cloves garlic, minced
2 tbsp mustard
1 cup orange juice
25g almonds, flaked and toasted
Directions:
Cook the pasta in enough boiling salted water in a large pot according to packet instructions. Add the broccoli three minutes before the pasta is totally cooked.
In low heat, gently heat the oil in a large Chinese cooking pan. Stir the chicken until golden brown and then add the garlic before it is fully cooked. In a small mixing bow, combine mustard with the orange juice. Then, pour the mixture into the chicken and simmer in low heat for two minutes. Drain the broccoli and pasta from the large pot but reserve 3 tablespoons of pasta and broccoli water. Toss the broccoli and pasta into the chicken mixture and then add and stir the pasta water with the almonds. Season with salt and pepper and serve.
